Sorry can't help you on the projects you have, but I am now getting involved in trying to find activities for my mum that include other dementia patients in her nursing home. I would try not to focus on what you don't have, like tables. borrowing trays from the kitchen can be the best compromise.
My own experience and I realise it must vary depending on ability is that bingo and quizzes don't suit everyone. My mother gets quite frustrated with a quiz because she can't understand the question, or can't remember the answer. Bingo, she can't recognise. So she ends up feeling bad if she tries to participate. just an observation, that there are many levels to this illness. I think I am feeling frustrated that the activity people and mum's home don't try to make an effort to understand the limitations of the illness first and then work out what they can do.
I'd like to see more music based activities, singing, movement with music, very simple arty stuff, in mum's case it's as simple as putting buttons into different colours. I would try not to focus on what the staff thinks, what matters is that the residents are responding well and that will show. Remember also if you are choosing themes, they won't suit everyone. In many homes now they have 1950s styled areas. My mother hated the 1950s and has bad memories of it, so I feel they don't always work.
